 I wouldn't do that without having a more clearer picture on the problem.

Usually those '.prob-uuid' files are nothing more than probe files : https://github.com/oVirt/ioprocess/blob/ae379c8de83b28d73b6bd42d84e4e942821a7753/src/exported-functions.c#L867-L873 and deleting the old entries should not affect oVirt at all (should != will not).
If your oVirt is used for Prod, I would delete them in low traffic hours/planned maintenance window.

Can you provide the output of 'gluster volume heal volumeX info' in separate files ?
