Usually ,
the server is patched and then the client. So your order of update is untested and nobody can tell you what version to use for the client .
You have to try it yourself, and see which one works for you.

Due to the abnormal high memory consumption of the gluster client we currently plan to just update the clients.
Currently we have server and clients running version 5.10, upto what client version can glusterfs server 5.10 compatible with?
We will be planning to move to the latest stable glusterfs release but that might take some time so meanwhile we want to immediately fix the client side issue as that is hampering daily operations.

Would be very helpful if someone could help in solving the glusterfs client memory issue.

As usually the upgrade is started from the server, try to upgrade to v6.<latest> or v7.<latest> and if it works without issues - then upgrade the real clients.

So we want to try running client with 7.0 or higher with the current server version (5.10) and check if it helps us for immediate use.

You should first upgrade the cluster and then the clients. Supporting older clients is based on the cluster.op-version (the higher it is, the newer client you should use).
Yet, your version is quite old and you should consider upgrading.
