Something along the lines of "sed 's/.$//", as in:
dog="doggy:"; echo $dog | sed 's/.$//'
That would remove any last character. To just get ":":
dog="doggy:"; echo $dog | sed 's/:$//'
(No, I didn't know that. I googled.)
