[Gluster-users] Can you re-ip servers in a gluster brick without breaking it?

The metadata maintained in bricks is not a function of the hostname or 
IP. The procedure that you refer to should work. Make sure that you have 
a backup of /var/lib/glusterd on each node before you attempt this :-).
