With two servers, I'd use either "replicate" (if I want all files
stored on both nodes) or distribute (if I just want to aggregate disk
space to one big volume) - using both of them together in one volume
does not have any advantage with two servers, IMHO.

For more details, try the "old" documentation: (that's how it was done
before glusterfs-volgen was written)
