This is still an issue with glusterfs-3.5.2. The steps in comment #3 result in
the following error:

    open(dovecot.index): No such file or directory

This error is hit in just a few seconds while running on a single-brick volume.
Mounting with '-o entry-timeout=0' does not make a noticeable difference.
